The Story of the Little Red Hen

The decision has been made...I need to make salsa.  We are down to 3 bottles.  In my house salsa is a food group all in itself.  Usually I try to go 1 or 2 years without making it.  The problem with this year was I have already gone 2 years of being lazy.  My story is I whine and grumble and complain until there are no more tomatoes and then I do not have to worry about it for another year.  Well this is the year.....

So I let my family know, I am going to pick tomatoes.  Of course there were volunteers that offered to go but things came up, so I went and picked them myself.  Then it came time to make the salsa.  I had volunteers but of course I very nicely chose to play the martyr and told them all no, I was fine and would do it myself (if I had let them help, where would my fantastic story be?). 

Are you feeling sorry for me yet???  Well first of all I like to get my tomatoes at "Day Farms" in west Layton.  They are so reasonably priced and easy access.  BJ was there this year and directed me to a spot no one else was picking.  I drove my car right there.  Left my boxes in the back and took my two recycle bags with me.  Took one step to the side of the lane and started picking.  I filled two boxes in 30 minutes and only went in a 3 foot radius.

So I bring them home and started on my chore.  In the past it has taken me an entire day to clean, peel, chop, mash, cut, stir, cook, bottle and then all night to cook.  This year I am brilliant.  These are the tools I used:  plus of course my wonderful Hamilton Beach processor that I get out once a year (okay maybe every two years).  These tools saved me hours.  I filled two electric roaster pans in two hours.  This year I chose not to cook and peel the tomatoes.  I decided I leave the skins on with fresh salsa so why not with cooked.  So I did and it is great! 

I took my roasting pan insert and set my wonderful cutting board on top with the flexible cutting mat for easy disposal of garbage.  Then I washed the tomatoes and using the Veggie Wedger cut the tomatoes and processed them.  I use the core and more to take out the core.  Then I discovered another amazing use for this incredible tool.  the melon ball end will take the stem and seeds right out of a bell pepper.  So slick.  Then I used the Veggie Wedger for them and the onions.  The garlic peeler made peeling 2 buds of garlic a breeze.  Then back the the Core 'N More.  The corer end will take out the seeds and veins of the jalapenos slick as can be without burning your hands.  LOVE IT!. 

Of course my wonderful brushes.  The little one for the Veggie Wedger because the seeds stick and the larger brush I discovered cleans out the Garlic Peeler perfectly. 

The large Scraper is the best stir stick ever.  The handle is long, the edge is angles for the bottom of the pan and it can withstand the heat.  I used the Silicone Oven Mitt to get the bottles out of the Pressure Canner in the hot water.  Clean up was a breeze and my back feels great. 

In fact it was so amazing, I think I will make some spaghetti sauce before I leave for my trip to DENVER!!!!  I have to say I am very excited.  I also am receiving an award for just working my business this past year.  I believe it will have some bling involved.

The ending to my story is just a little different than the Little Red Hen.  I have to say, I had almost as much fun making it this year as I did the year I let Colby sluff school in 5th grade to stay home and help me.  I truly love making salsa for my family because they really are so appreciative of everything I do for them.  I love them so much.
